Appetisers of Plantain
The combination of sweet plantain and the savoury guacamole and rice make a perfect starter for a dinner party. But it can be a great lunch or snack as well if you serve them just for one portion.
Ingredients 1. 1 semi- ripe plantain, peeled and cut in
2. slices lengthwise of 5 milimetres of thckness.
3. Oil enough for frying.
For the filling
White rice or rice with coconut.

Preparation
1. Heat about 1/2 cup of oil in a saucepan over medium heat.
2. Add the plantains one by one and let then soak in the oil for few minutes until lightly golden. Turn and fry the other side.
3. Remove to a plate with paper towels and when still warm mold them in a ring and secure with a toothpick to keep them in one piece.
4. Then fill with rice or guacamole, using a ring or cookie cutter.
5. You can decorate with slices of tomato or some shrimps.
